The Leidenfrost effect is a phenomenon in which a liquid, in near contact with a mass significantly hotter than its boiling point, produces an insulating vapor layer which keeps that liquid from boiling rapidly.

But would the Leidenfrost phenomenon explain why it doesn't burn his hands? I'm sure some part of his hands must go beneath the surface of the boiling oil.
At first I thought he had that medical condition where he feels no pain, but he would still get burns on his hands, so I guess that's not it.
