The dandelion greens are great either in salad or lightly sauteed with something to cut the bitterness a little. We made a warm dressing with balsamic vinegar and olive oil and some fancy Spanish almonds and golden raisins and it was just right. I think pine nuts would work too.

Greens for breakfast? Of course! Stuff them in an omelet with goat cheese! And my favorite greens dinner: greens, rice, and an egg all scrambled together with salt, pepper, and/or a "generic seasoning mix" like Spike.

I love Saag Paneer - what a wonderful recipe! I had no idea TJ's sold paneer - how cool.

greens with caramelized onion in an omelet with mushroom and cheddar.
I am also Paneer fan but I have always made it with peas. This looks great.

Maria - your bitter greens with warm vinaigrette sound great. I think some bacon in there would make it even better.
Emily - it's true that it's not so hard to eat your greens for breakfast. The spinach, goat cheese, egg combo is one of my favorites. I'm going to have to try your dinner scramble. That sounds like a quick and yummy meal.
Tricia - I've never tried the Turkish breakfast at Zola. That's a favorite when we have visitors from out of town....so, calling all visitors!
Jen - I'm re-thinking my paneer purchase location. I have bought it at TJ I believe, but this paneer was purchased frozen from the excellent Bombay Grocers at Packard and Platt. Do you ever go there? They are really nice and have a huge selection tucked into their tiny store. I always pick up a couple of desserts and pakoras on my out too.
MK - excellent way to use beets. Our supply is already dwindling and I haven't even pickled any yet. Do you do pickled beets?
Shayne - your idea for using greens for breakfast also sounds amazing. I have a feeling that might be on the menu this weekend.
Wow, I've gotten so many good ideas from this one post, I think I'm starting to catch on to why this blogging thing might be useful.
