Hi Everyone!
Happy Mother's Day to all you mothers, and for all of you cooking for your mothers, below is a great breakfast or brunch addition to your menu. Simple, savory and satisfying, everyone will love this one. If you have any chopped, cooked ham or prosciutto, throw it in too, it makes a wonderful addition to this casserole. I enjoy it with the diced jalape�o peppers included, but if Mom prefers things on the milder side, just omit them�there are lots of other flavors to still carry the dish.
Hope you have a lovely day. We are having the troops over to celebrate for my wife, Carol. Mother's Day holds a very special place in my heart. I had the dearest, sweetest mother in the world, and as I've said many times before, she would cook for you at 3 AM, if you were hungry. Hope your day is one that's memorable!

Mother's Day
Breakfast Casserole
Preheat oven to 350 degrees.
Spray a 6 x 9 inch casserole dish with Pam or olive oil spray.
10 eggs
4 basil leaves, torn into small pieces
1/4 cup shredded mozzarella cheese
1/4 cup shredded cheddar cheese
1/4 cup, chopped roasted red peppers
1 tablespoon Dom DeLuise Italian Blend
3 tablespoons diced jalape�o peppers (optional)
1 tablespoon flour
1/2 cup milk
1/4 cup Parmesan cheese to sprinkle on top
In a large bowl, combine all ingredients. Whip with a fork like you are making scrambled eggs. Pour all ingredients into a greased casserole dish and sprinkle the top with Parmesan cheese.
Bake about 50 minutes until egg mixture rises and top is golden brown. Let cool a few minutes and cut into serving squares. Remove squares with a spatula.
Lovely served with a fruit salad, coffee cake or croissants and of course, a Mimosa for Mom.
Serves 6
