When it comes to covers, I cannot help but be impressed by those that Bananarama have done. they've covered The Beatles "Help!," ABBA's "Waterloo," and George Michael's "Careless Whisper," and others... all of them pretty decent. Unfortunately, some of the more interesting ones are very hard to track down.
Other than that...
Erasure's cover of Peter Gabriel's "Solsbury Hill".

Lenny Kravitz's cover of The Who's "American Woman".

I saw the last live performance of Miles Davis in Chicago before he died. During that show he began to play a riff that was just barely familiar to the audience. I mean you could see people leaning forward saying "I know that song. But what the heck is it?"
He was doing his own take, and didn't start it at the start, so to speak. Then when he hit the "hook" there was this wave of recognition that went over the crowd and we all gave him a round for it.
He was doing a jazz version of Lauper's Time After Time... some versions of which you can still find at YouTube, though none I saw there were as good as the one in Chicago.

Enough with the nitpicky.
I just got Rebuild The Wall by Luther Wright and the Wrongs, an alt-country/bluegrass/zydeco version of the entire Pink Floyd concept album, The Wall.
Senor Coconut - Beat It, though I prefer their version of Riders on the Storm by the Doors.
The legendary Don Ho performs the Peter Gabriel classic here.

Nirvana's cover of The Man Who Soled the World is better.
However, for a ow my fucking ears, holy hell, make them shut up cover is Metallica's cover Of Skynyrd's Tuesday's Gone.
I'm expecting Ronnie Van Zant to rise from his grave and kill James Hetfield any day now.
Horrible! Just horrible.
Also you have the new Def Leppard record with covers...Bad Finger, etc (tho that and Mony Mony are 70's tunes)

The Lords Of The New Church do a great cover of "Like A Virgin"
Jenny Lewis and The Watson Twins do a pretty good cover of the Traveling Wilbury's "Handle With Care"

And have you heard Me First and the Gimme Gimmes ? They do punk covers. They have a great record of soundtrack tunes, that includes the Rainbow Connection(Muppet Movie), Don't Cry For Me Argentina(Evita) and
It's Raining On Prom Night(Grease, I think) among others. I'm not sure they have one of 80's and 90's covers, but they might. I know they have 60's and 70's. And a concept album where they are the band at a Bar Mitzvah(excuse my spelling if I butchered that) that is hilarious.

Good topic. Of course, it would be better if you included the kick-ass 70s and left out the suck-ass 90s, but.. 
Here's some suggestions.
For a hoot, you've got to check out Hayseed Dixie's take on AC/DC songs. It's so wrong, yet so right. A hillbilly 'I've Got Big Balls'? It works.
Okay, then there's The Clash's (1979, close enough to 1980) 'Lost in the Supermarket', covered by Afghan Wigs.
Crazy (Seal) covered by Mushroomhead.
Mad Worlds (Tears For Fears) covered by Gary Jules. This is on the Donnie Darko soundtrack.
Anti-Christ (Slayer), covered by Less Than Jake.
Gin and Juice (Snoop Dog), covered by The Gourds.
Tom Sawyer(Rush) covered by Deadsy.
Love Song (The Cure) covered by 311.
Well, there are a few. If you need more, you know who to ask, cuz I'm the hardest rockin' bee-yotch in these parts!

Rhys, the problem with '70s songs is that I don't know the originals, so the covers don't have any impact. That Hayseed Dixie song reminds me of Hard-n-Phirm's rockabilly remake of Radiohead's songs, and some band that remade Metallica songs with bluegrass. Those are some good suggestions.

Grant, I don't shy away from metal, but there's something about remixes of cheesy songs from my childhood that I love.

I don't know the name of it (and maybe it's mentioned above), but for what it's worth, there's an acoustic guitar guy band that does a cover of hip hop artist Easy E's "The Boys in the Hood"... you know the song that goes something like "The boyz in the hood are always hard. Go talking that trash and we'll pull your card... Knowing nothing in life but to be legit... don't quote me boy 'cuz I ain't said sh*t"... and he's talking about all this hard-core gangsta stuff and then these white guys remade it with their strumming guitars all pretty and sing-songy; it's hilarious.

Yeah...I'm a bit late leaving a comment here for this post, AND I'm breaking the rules you've established for remakes of 80's and 90's tunes.........BUT, last year, The Scissor Sisters somehow turned Pink Floyd's "Comfortably Numb" (from the December 1979 release 'The Wall') from a slow, moving ballad into an awesome dance track. Check it out....or not.
