Betty, one of your food posts mentioned a brine for your turkey and I was thinking of using it for chicken. If you have a minute could you give me a recipe?
Sure, HB. Get a container that will fit in your fridge and into which the bird fits (I use a cooler for turkey, but with a chicken, you might be able to use something smaller.) Fill it about a quarter of the way with cold water. Pour in around a cup of kosher salt, half a cup of brown sugar and a handful each of whole allspice berries and black peppercorns. Stir it up to dissolve the salt and sugar. Place the bird in the cooler, and fill the container to cover with heavily iced water, sloshing it around to mix it up. Refrigerate overnight, then discard the brine and cook as planned. Hope it works out for you!
