First, buy a refurb. Look at the bottom left corner of store.apple.com, and there's a link to the refurb store. You can get a white MacBook for $900.
Second, look at the specs. The hard drives are small, but the CPU starts at a 2 GHz Core II Duo. High end RAM, etc.
The build quality is generally higher than most low end laptops I've seen.
Plus, it's a Mac. Built on BSD/unix. Works like a champ. Comes with iLife, which ought to be a $200 or so package of apps.
Finally, they keep running well. A 4 year old Mac is still a great machine, whereas most 4 year old PCs have so much cruft accrued they run like dogs.
The Unix thing made me switch 6 years ago. The user experience made me stay.
