The Omnivore's Dilemma doesn't go into all that much detail about how meat is processed (unlike, say, Fast Food Nation). I'd recommend it as a though-provoking, and well-written read. Another in that vein is Animal, Vegetable, Miracle by Barbara Kingsolver.
I read Animal, Vegetable, Miracle--great book! I also read Fast Food Nation, and it took me a really long time to recover.
