What does 'knocking back at least once' mean in this context? Are you supposed to do shots while making this bread?

I frequently do... but that isn't what that particular phrase means. Sorry, got all baking techy speak on you. It has its own language you know! "Knocking Back" is just that, and great fun. You literally punch the dough knocking back the air stuffing. TB
