raw milk blue? you lucky git.
liver? mmmmmmm. harvard cows no less.
try this.
melt two tablespoons butter in a sauté pan over medium heat. cook 1 1/2 cups chopped onion until the edges get golden. dust up 1 pound diced liver with salt and pepper, then add to the onions with 1 tablespoon fresh thyme, (a little touch of dill wouldn't hurt a thing nor would some of the celery tops). cook until liver chunks are done clear through (about 6 minutes). remove from heat, empty pan contents into a food processor, deglaze pan with a splash of brandy or sherry, add that to the processor.
warning this will cause heart racing and palpitations for food porn addicts maybe even some drool action
add 6 oz crumbled bleu cheese to the hot meat/onion/herb in the processor and blend until smooth.
pack into a bowl, or decorative food mold lined with plastic. chill 1 day.
spread on crackers or bruschetta, or, in a sandwich of whole wheat bread and sliced raw onion. . .mmmmmmmmm.

p.s. on the food is healing thing.
generally cravings are the body's way of telling you what it needs. the old healers on the rez often told people who were anemic or had experienced blood loss to eat liver, sliced thin, toasted, dipped in salt water.
i flat ass adore lapsang souchong tea! i make mine for iced tea in the sun. i like it damned near opaque.

Liver is still in the freezer but may do this Thursday or Saturday--I have dill frozen (my own) and blue cheese...

RE LadyBits--it ain't over yet; bleeding picked up again; may mean another D&C or the ablation after all, but at least it's NOT malignent and it does NOT seem to be the fibroids, which can apparently be let be for the moment...thanks agian!

Jen, I had the ablation thing last year due to some post/menopausal bleeding. Best damn thing I have done in a long, long time. Highly recommend the procedure. I was kind of going thru menopause and kept having bleeding (often heavy) every six months or so....doc suggested the ablation and told me I would not bleed again. What a relief that has been.
Don't hesitate if your doc says you should do it.

Glad to hear the good news! I am drooling at the list of food. I have been experimenting with food combos like pasta sauce made from caramelized onions in balsamic vinegar and blue cheese, walnut, and peach salad. It's interesting how sweet and pungent really go well together.

Internet problems in the Caribbean due to multiple storm collisions prevented me from making my usual comment on time.
Love the food and recipe posts, best wishes for overcoming all the health difficulties. Eat well get well and I await next week.
