Canning tomatoes is VERY anticlimactic. Sometimes, after a full day of canning, I'll look at my 10 jars of canned salsa/soup, and think, where did all the tomatoes go?

Patty-pan or Winter squash can be sliced thinly, dipped in milk, then dredged in flour and pan-fried until lightly golden.
