maybe half cream is what we call here as half n half, then the single cream is light cream, double cream is heavy cream, and then I don't know what your equivalent to our whipping cream.
Anyway, I have been making my mashed potatoes by sort of half-boiling half-steaming them (by adding water to reach just half of the height of potatoes- turo ng nanay ko for potato salads). Then I add butter first to let it melt while potatoes are super hot then I use the beaters not running just to break them up into smalled pieces. Saka ko lang add yung half-n-half and beat on lowest speed of hand mixer to make it fluffy and light and creamy. Konting salt and pepper (usually white) tapos kanya-kanya na kami ng timpla sa plato.

hi Toni,
Single cream is also known as just 'cream'. I guess it was called that as opposed to double cream, clotted cream, or whipping cream. The main difference is in the butterfat content - the whipping and clotted cream being on the higher end while the single cream and half cream on the lower end. I think the canned Nestle cream is classified as sterilised cream? Not sure but maybe I can check on the tin later.
Here is an informative site on the subject: http://www.dairytraining.org.uk/...oduct-
cream.htm
