hi Kiley, thanks for dropping by. Tortang talong would exactly be like this recipe but no meat. It's simpler and easier, di ba? Enjoy it.

Ah! Tortang Talong! I haven't had that in years. That was one of my favourite vegetarian dishes when I lived in the Phils as a child. Thanks for the recipe, I'll definitely make some tonight

@Batjay: This is my husband's favourite maybe that's why he came up with a solution. 
@Keiko: Cook? My husband? You must be kidding right? He can cook like - boiled water, fried eggs, steamed rice. Anything more complicated than that he calls me like every 5 minutes asking every minute detail - do I put on the cover, how much salt, it's boiling now!, do I stir it, etc, etc. :sigh:

and of course tortang talong / rellenong talong is one of my all time favorite dishes. my mom cooks this for me everytime i come home.

@MrsT: hallo there? Is the ice and snow thawing yet? 
@Stel: Thank u thank u my dear. Same with me, I've tried so many diff combination and techniques but still ends up in a mess. My MIL though what she does is divide the talong and meat and make several small to medium sized relleno. This way she uses more eggs but they don't fall apart. But I think the easiest is putting it in the oven altho it won't have that crispy, oily taste in it.

happy mother's day!
what an innovative way to make torta...(yun din tawag namin diyan eh). i've tried putting the eggplant in a flat dish then assembling the meat and beaten egg then gently pushing off into the pan...i've also done it upside down: egg, "meat, aubergine"...haaay.always falls apart. time to try this new way.
remember michael franks' "eggplant" song, ca. 1975? i'll replace w/ the posh word heehee.
