hi celia! i eat only "kosher" so i rather mix minced chicken & beef instead of pork - hope you'll try it too. the other "version" of empanadas in the philippines that i've tasted were in batac, ilocos norte made of beansprout, grated green papaya & eggs, if you order special they'll add longanisa. the crust is terribly delicious which is made of rice! keep up your talent & try your best to have a short visit there in batac!!!

Hi Bay Leaf, thanks for visiting. Yeah it can be tedious that's why I only do this once in awhile.

wow, what tedious work and you've done it! Kudos! It's one of my favorite snacks but i don't have the time and patience so i'll try it but will buy ready made pastry from the grocery.

Ah, so it's in Vigan. Thanks for the info Christine. And I have to admit I haven't tried Ilocano longganisa. Friends said they're great.

Tita Celia,
About the Ilocano empanada, the first time I try that “we call it empanada actually” there something special inside of the filling, they use grated papaya, with a little ground meat, actually they use the Ilocano longganisa-take the casing off and it’s really to die for empanada’s with red chili and vinegar for a dipping sauce. If anyone wants to taste that special ilocano’s empanada, it’s in Vigan, Ilocos Sur just around the street plaza. I tried it once when I attended my Uncle’s wedding and that was 15 yrs. ago. That is one of our specialty in Ilocos. How can I forget-taste really good!

Karen: I've heard about that Ilocano empanada, can't remember the name though. I think I read it in the Philstar where Claude Tayag was raving abt street food in an Ilocos city.
Xtine: hi dearie! Yes when in doubt or not enough time, use ready made puff or shortcrust pastry.

Tita Celia,
Don’t worry about pinching and rolling but this is the secret “I used puff pastry.”

Ayan, savoury is more like it, not that I'm complaining about the desserts.
Ronald and Katia have a good post on Sicilain 'mpanate, savoury and sweet if I remember right.
In the Philippines, we also have several versions like the Ilocano and the almost extinct Kapampangan 'panara which has some grated green papaya for the filling.
Basta, winner pag empanada! Bow talaga ako sa English patis!

Hi Celia - this was absolutely delicious, I'm so lucky to have had some of your exquisite creations. I must give it a try sometime, although I doubt mine would turn out as delicious as yours...

Sha: That Lebanese one sounds great. And I do have to try to do the Spanish version and of course the Cornish pasty. Both more savoury than the Pinoy one.
And sure we can make some when you're here basta ikaw ang magbabalot. Hahaha! j/k lang ha...
Xtine: Cumin? That sounds like it's Indian. Might have been a samosa type? Yeah do try to make some though it takes quite some work in rolling and pinching them.

Tita Celia,
It looks really good! I tried some other recipe which they use ground cumin as one of the spices but it made me so sick, its good but for some reason ground cumin overpowering the taste but I still have to make empanada with the same recipe just because I couldn’t find any alternative empanada recipe and now, you finally got me into a real Filipino empanada's. I will try this recipe once I get back for a weekend getaway. Thanks again! Write me soon…
