Jeanne & Clare: Zucchini or courgettes - whatever we call it - this is really nice.
Bok: It wasn't bitter actually. In the slicing, I discarded the very first slice the one with the thick skin. So I used only ones where the skin is on the sides.
Sha & AnP: This is real easy to make.

That's funny because we call them zucchini in Australia, it might be from all the italian immigrants. It looks like a really nice salad that I am sure I will make!

Thrilled to hear you liked this enough to make this for your family! It really is one of my favourite salad recipes...
Oddly enough, I always used to call it carpaccio of courgettes back home - I think I only switched to the Italian version when I got to England!
