Gravatar Stef: Same here Stef, actually the King Edward is our standard baking/mashing potato. We find the unusual ones only in farm shops.

Joey: Actually anything goes if you want variety. I've eaten ones with carrots or brocolli in them though I'm not sure if they're still called colcannon. But they're such good additions to the std mash, IMHO.

Katya, Lani, Sachi, & Iska: They are very easy to make and does not require a great deal of effort or cost. Do try them.

Gravatar celia, looks delicious! i must say, i *love* the potato names. dito we're stuck with red potatoes, russet, boiling, baking potatoes. the most exotic na sa regular supermarket would be the Yukon Gold and fingerling potatoes. only when you go to a farm where there are heirloom potatoes can you sample different ones.
