Gemma: Hi there yeah putting the butter in between the skin is one of the techniques I was talking about. This post in particular is the simplest for beginners like my kids. Maybe later I would post the butter-in-the skin one. 
Jescel: yes yes I will try the brining method one of these days for a cheapo chicken from the supermarket. Let's see if we can deliver tasty food for less money.

Yeah, I agree with stel... my alternative is lemongrass and garlic.. it has a really yummy taste too. And yes, the brining technique works well too. Nevertheless, your chicken looks yummy.

hello,
i'm a lurker but i could not resist coming out of the woodwork as i use more or less the same roast chicken recipe. the breast side down-breast side up technique results in a moist chicken. instead of brushing melted butter, i insert butter slices in between the skin and the breast part (i got this from an episode of julia child's show).
