Yes, mine is a 62% also not a 65. I haven't purchased any of the new stuff yet. But I would venture that it will be 2 years before we really begin to see changes.

Hello there! I must say your cake looks absolutely delicious! I'm not usually a fan of white chocolate, but I might make an exception for this.

I was wrong about my extra dark Scharffen Berger.. it was 82% (2% darker..) We bought our 2kg box pre-Hershey's as well. But, I can't say that I know of any differences (pre- vs. post-Hershey). Have you experienced any quirks yet with post-Hershey SB chocolate?

We had guests in for dinner last night and they loved it! The balance was just perfect semisweet to white.

Ilove the night light reference! It was really very simple to make and not nearly as time consuming as I thought it would be.
