Plus ça change, plus c'est la meme chose...

Gravatar Vincci, yes it's the same way here. That's what the King Arthur person was pointing out. That the supposed whole grain breads aren't any better than the enriched four breads. What we all need to be be looking for is unprocessed flour. No bleaching, no bromating.

Gravatar I don't know if it's the same in the states, but in Canada, an interesting issue is that while white flour, and products made from white flour (i.e. bread, pasta, etc.) have to be enriched with vitamins. The same law does NOT apply to whole grain products, so in the end, they're not as good of a source of folate, thiamine, riboflavin, etc. as non-whole grain products are...

Gravatar Yes, Melissa corn syrup is the worst! I am studying quite a bit about the replacement of corn syrup in many of my recipes. When I get that figured out I will post it here. Thanks!

Yes Lisa!

Gravatar Oh so neat!

Gravatar "At that point in the discussion a woman rose her hand and mentioned that she had purchased a "Sara Lee" White whole wheat bread. Was it not whole wheat? No came the response. "WHY??" she asked. Carolyn said, "You'll have to ask the FDA. It is their standard and they allow manipulation of labels to sell their products legally.""

That's one of the reasons I bake my own bread (with King Arthur flour, interestingly enough). That, and corn syrup

Gravatar Thank you Sarah. I had to warm up to the real funny stuff!

Gravatar You usually give great advice that I would have never thought of but I'm happy to say that on this one, I'm on the ball. My grocery shopping takes about 5 times longer than most people's because I obsess over the labels on everything I pick up. The "whole grain" thing is a total racket.

In other news - your submissions to my blog contest have me ROLLING! "What Not to Wear?" Priceless! Thanks for playing
