Gravatar I LOVE Sylvia Weinstock. She was the inspiration for my wedding cake. I was trying and trying to figure out a way to get one of her cakes down here for that (New York is 2-1/2 hours a way). I still want one of her cakes someday.


Gravatar Pea, you should bake the cake the day before. Let it cool, wrap it up and then crumb coat it the day you want to ice it. Then once it is crumb coated put it back in the fridge to chill again. Then ice and decorate it once it's chilled. Don't chill it in the middle of decorating it unless it is too hot in the room. The decoration doesn't like to stay where you put it if the cake is too cold.


Gravatar I was just thinking is the reason I get so many crumbs because I don't cool it enough! And Do I freeze it or just get it really cold?

Gravatar Well done Grasshopper! I can smooth a cake, but I have to admit learning to use the paint guard made huge time cuts for me. Great tutorial! Back in the day I was 'more skilled' not so much nowadays! Awesome!
