Lovely site! I followed Jane Grigson's advice to store quince paste with bay leaves between the layers--it gives a beautiful subtle aroma. I've also thrown in a few apples when I haven't had enough quince.

Hello Carolyn, thank you so much for this recipe. My grandmother always make some paste of quinces but never wanted to share the recipe with us because she's so happy when we come and eat it in her kitchen !
