I am very much interested in cooking and history, so I really enjoy your blog. I grew up eating various kinds of greens, including dandelion greens. I never enjoyed them, though! One way we cooked dandelions was tasty: pick the first blooming heads of the spring season. Make sure none of the milky stem remains. Soak these heads in salt water for an hour or so. Drain. Pat dry. Roll in flour spiked with salt and paper. Fry in canola oil or canola oil with a little bacon grease added to it. Eat while hot. Absolutely delicious!
