It looks delicious. I'm always for sticking to local varieties of fruit. We've got a lovely apple variety called Rotelle in our part of Italy, greeny red, hard-skinned, sharp and packed with flavour. What people want a Golden Delicious for I'll never know!

I love, love, love, this blog. I'm constantly visiting it. I stumbled across it quite by accident while doing research for my latest novel. The novel takes place in 1740 Pointe-du-Lac, Trois-Rivieres, Sillery and Quebec City. Your blog is a goldmine for rich descriptions of traditional recipes to the times. So I'm excited to subscribe to your blog and follow along.
I'm currently writing a chapter where two gentlemen have a discussion over breakfast. Could I trouble you to riefly describe what a typical, but hearty breakfast would have been for two wealthy seigneurs?

Peter Kalm's Travels in North Ameria, 1770 edition, states: «French Canadians eat three meals a day, vis. breakfast, dinner and supper. They breakfast commonly between seven and eight, for the French here rise early … Some of the men dip a piece of bread in brandy and eat it; others take a dram of brandy and eat a piece of bread after it. Chocolate is likewise very common for breakfast, and many of the ladies drink coffee. Some eat no breakfast at all. I have never seen tea used here … I never saw them have bread and butter for breakfast. … For each person they put a plate, napkin, spoon and fork. (In the English colonies a napkin is seldom or never used). Sometimes they also provide knives, but they are generally omitted, all the ladies and gentlemen being provided with their own knives. The spoons and forks are of silver, and the plates of Delft ware (faience).» p. 473-474.

I just finished lunch with an apple. I have waited all summer to get that first crisp, sweet bite of apple. Apples are the language of the fall. I use to live on a property with 3 apple trees and trying to gauge when to pick them was always hard. Racing harvest time with the birds and the squirrels!
I love how you are looking for heirloom varieties. I don't have a yard anymore, so I enjoy your gardening process vicariously. Thank you. Merci!
