I used to get dried banana in Oxfam and would throw some of that in too, as well as fresh bananas, yum.

I use Ruth's recipe for banana bread as well. I usually omit the nuts and mix in white chocolate with semi sweet or use just white chocolate entirely. So good!

I love this recipe, I've made it loads of times with different nuts. However, I usually put less sugar in (about 1/2 - 3/4 cup) because I find 1 cup too much, it's sweet enough with the ripe bananas.

I tried this, and it was so dry I ended up putting two eggs in. and it took much longer to cook then. So for real the three eggs were enough for everyone else to bind all the ingredients together without being too stiff?? I have made so many banana breads, and this one is confusing. THANKS

Erm, I can see why you were confused, considering there ARE no eggs in this recipe!!! 
Mash 3 bananas, add 1 cup sugar, 1.5 cups flour, 1 cup chopped walnuts, 3 tbsp butter. No eggs!!!

sorry I meant 3 bananas were enough liquid to bind it all together. It was more like a bread dough, that you could pick up and knead, not pour like most other banana breads. I get that the original recipe had noooooooo eggs!!! Thanks.
