I just have to tell you that I enjoy your blog very much! I'm the one who made the Irish Pancakes from your recipe on Pancake Tuesday. I'm Irish, and live in Florida - DH is Irish too - but is now a US citizen. I have a toddler and a 5 month old - I will definitely be trying the chicken balls for her (the toddler - not the five month old lol!) - she's a great eater - but we love new things to try. I made quesadillas tonight - not exactly to your recipe - I just used what I had - but that picture sure put me in the mood for them

DH has many family members whom have come and gone between Ireland and the States - and they've told me that if we ever move home, I would be able to have my green card reinstated if we came back to the states because I'm married to a citizen - so maybe that is still an option for you if you come back? Having looked recently at property prices for our home towns - moving back to Ireland is definitely not an option in our near future!

Sorry - got a bit long winded there - anyway - great blog!

I'll have to get your address and send you some of the amazing herbs and stuff my mum brought me back from Turkey, including the most lush looking vanilla pods I have ever seen. They are huge. Email me if you fancy some seriously fresh dried herbs, an oxymoron I know but a lot better than what you would buy anywhere.

I haven't a clue what to do with them all (except I want to photograph them LOL) yet but I keep coming back looking for inspiration.

So keep it coming, loving the site.
