Gravatar Oh, that was SO good when we made it. I think that Ella liked her sleeping girls, even if they were a bit silly looking! I made a similar dish here with manacotti and spinach with red sauce. Chad said he loved it but when I looked over at his plate he had scraped all of the spinach out of it. I guess you are right, some people just don't like it.

Gravatar I love this but the rest of my family are not spinach fans, maybe it will come as I didn't like spinach until my 20's.


Gravatar Oooh. Good recipe. I'm having guests on Friday and I was wondering what to make. I think a pan of Manicotti and a pan of White Canelloni. Where do you get your canelloni. Are they fresh or dried?


Gravatar Barbara - I used dried, and I didn't cook them first. They maintain a bit of bite, but are fully cooked. If you can get fresh though I would use those! Good luck with your guests!


Gravatar Beccy - I was the same. Used to hate spinach until I met the husband who is a fan, and while it still wouldn't be my first choice, I like it well enough!


Gravatar I have a lovely recipe of this which I spotted on the five minute slot from Consuming Passions years ago, http://www.abc.net.au/passions/ Everything is the same except:

You can add roasted pine nuts to the spinach, ricotta mix and they also included cottage cheese. I've also found that fresh spinach beats frozen everytime.

Place stuffed cannelloni on bed of tomato sauce and cover with a layer of bechamel or white sauce, then bake. Serve with a crunchy green salad and bottle of merlot.

I've been doing this for years and it never fails to impress.


Gravatar Redmum - Pine nuts sound so good with that - would add a nice crunch - will have to try that... like the idea of both sauces too. YUM!


Gravatar Ohh and I should also say, you can also forget about the cannelloni and wrap it in filo pastry.

lay out about four strips of pastry. Paint on one side with a little oil and pepper, lift sheet, turn it over to lie flat (oil side down) on sheet underneath adn repeat until all are covered.

Wrap up the lovely spinachy-cheesy goo, cook in the oven and serve with tomato sauce on the side with salad. Also seriously wonderful
