Gravatar This sounds absolutely scrumptious. Except I hate peas. But, I'm going to make it with the peas anyway.

I've got prawns. And I've got saffron. I've ALWAYS got risotto in my cupboard -- so you know I'm making this tomorrow night.

Thanks for another great sounding recipe.

(and you know what? it's so cold, blustery and yuk here right now, I'm about to make some more baked potato soup, lol!)

I slightly resent shelling out loads for saffron when you only get a tiny bit, but I might just for this dish!


Gravatar oooo yum!! am just wondering about the prawns, I've been to Lidl twice and can't find tiger prawns, the only ones that are 4.99 are cooked in their shells but there's nothing about being de-yucked and stuff? Are these the rights ones?

Gravatar TLG- You could go with broad (lima) beans or edamame (soya) beans just as easily... or you could leave them out entirely... it wouldn't make a huge difference!

Ruth - That's the beauty of using the boiling water... you get more flavour for less saffron!

Rachel - I have had the same problem... the same prawns I bought several times over the holiday are now 11.99! Atrocious! I don't know if they had a price malfunction there for awhile... just wish I'd bought up more when they were 4.99!!!

Manuel - The time starts now. You can do it... maybe not anyone can... but you... yes, absolutely... I should be afraid you'd put me to shame!!!!

Gravatar It's the chopping the celery and onion that vexes me when it comes to risotto.

Are you telling me I don't need to do this? Just one large shallot? And can I have all those hours back?

Gravatar LAIKI - Sorry your first try didn't work... what happened? Not cooked enough or cooked too much? It's a tough call, I recommend frequent taste tests towards the end!

GAM - Yep, nice shallot or small onion will do just fine. Some less flavourful risottos might need celery, but if you are using good quality stock, you should be fine!

I love risotto especially risi e bisi and king prawn risotto, so with the two meals combined this has to be an ultimate meal for me.

Gravatar I agree with you Deborah, risotto is best made at home. Whenever we go out to an Italian restaurant, my byfrnd always says 'oh look they have risotto' - but I never order it. I believe my homemade risotto is better, chefs don't have half an hour to stand over a pot stirring so, like you mentioned, it is partially pre-made. Yuck! The place I used to work in had a canteen that often made risotto - mass made pea risotto, it used to look like rice pudding. So wrong.
