The Humble Housewife

I made the potato soup for lunch yesterday and the hot cocoa for breakfast this morning. My son (21 yrs) requested the soup again today since it is freezing rain and sleet here. I am getting ready to make it. It was the best I ever had! So was the cocoa. I would never have thought to put vanilla in the cocoa. It was great. I am also going to make the rolls in a few minutes. You have the best blog around! :D

Beth - You are right it should read 3/4 cup oil. Will change that. I remember thinking it was substantial too, but the dish doesn't seem oily in the least - quite the opposite!

Can I suggest you use Greek yoghurt next time you make this? Omg, it makes a world of difference....and tastes so yummy compared to normal yoghurt. (imo)

TLG - The flour goes right in with the yoghurt and eggs that the veg is folded into. Just mix everything together! Weird, but it works! I do like Greek yoghurt much better as well, but I don't think the consistency would be right for this. I also think the slight tang from regular yoghurt helps offset the sweetness of some of the veg.
