The Victoria sponge I've seen before (Nigella?) but I don't remember mascarpone, mmmmm.

Oh that looks delicious, you are making me very hungry. Will definitely make the sausage bake.
I love a victoria sandwich but usually leave the cream out when making one for just the family, prehaps I'll try the mascarpone next time.

Foodireland.com is great as you say - but sadly only for special occasions in this house - we'd go broke otherwise!

Thanks for the entry! You are right about it being handy that many of the ingredients in the sandwich are the same - I don't think I have looked at a recipe since I was abut 10 years old. I know it off by heart. Like my sister - I don't usually put cream in it, but there really shouldn't be anything to stop me.

LOL Lisa- can relate on the sausies, but it's not all that bad! Yes, Nigella makes Victoria Sandwich. I actually used mascarpone because when I went to whip the cream it had gone off! I think I will use mascarpone from now on... it was so rich!
Beccy - See someone can appreciate a good old heart attack bake? 
Annie - I hear you... it is pricey, but worth it for Xmas! 
Sam - Thank YOU for hosting such a fun event! I had much higher aspirations, but time got the better of me! Have had fun looking through all the other recipes.
