Gravatar Funny I made chicken fajitas for my hubby tonight cos I was dining out. Unfortunately he's never been fond of home recipes for fajitas and prefers the spice mixes.... might try yours next time and see if he notices


Gravatar Fajitas have got to be done with beef skirt. And it should be cooked (high heat or best is on the grill) in one big piece - then it's cut up at the end. Sorry Debs - but I'm a living, breathin Texan (who has a Mexican for a stepdad) and I grew up eating this stuff every week. Can I send you my (very simple!) recipe and will you try it? I promise you won't want to go back to anything else. (pssst, if you ever get over to the SW of Eng, I'll personally lay on a big Tex Mex feast for you. I pinky swear!)


Gravatar Omg, I just read the recipes for the pico and the guac....we gotta talk. I mean I KNOW you appreciate really tasty food. And your Tex-Mex recipes are kinda close (the pico is really close)....but just a coupla tweaks and your taste buds will totally dance with joy. Even the cornbread (and I promise I will tell you both recipes, coz everyone gets crazy about which one is best).

Thowwy...the Southern food thing gets me everytime.

p.s. I agree - the pico shouldn't be diced into tiny pieces...chopped is better.

This sounds like it would be a great way to prepare less expensive meat for skewer kebabs on the summer barbecue too.

Portabella mushrooms - I'm a fan too - they are so meaty you can almost forgo the meat in dishes with them. Slurp.
