I'm not a huge fan of peanut butter but I must say these look good~ I wonder if I could sub with almond butter?

You should stick a 'gluten-free' tag on this entry.
I had a couple of friends (out in the Middle East) who couldn't eat ANY trace of wheat and they used to make these all the time. They are definitely scrumptious .
Have you tried Xylitol (natural sweetener with half the calories of sugar -- and it bakes well!)?
I think I'm gonna go make these now. I don't care if it's 12:17am.

Annie - Yeah maybe... my kids don't notice so much if there's jam on the sandwich, but if it's just PB they won't eat the Irish stuff.
Chris - I'm not sure, almonds are maybe a little less oily, so might not take as long to cook. Let me know if you try!

I can not wait to make these with my 4 year old. Peanut butter cookies are Daddies favorite. We were going to make them a few days ago as a surprise, but when I got out the recipe I realized that the dough needed to chill for a few hours before baking which we did not have time for. If I had been up to date on my feed reader I would have had a solution. Thank you for sharing!
