If one is using fresh lemons, should the lemon be juiced as well as pulped?

Nope. Just take the seeds out and put the whole slices in to cook with the chicken. With preserved lemons, they taste wonderfully sour and salty. With fresh, the cooking time makes even the peel edible and good.
