Try this: cut french fries and spray with Pam or coat lightly with olive or vegetable oil. Spread them on a cookie sheet and bake for about half an hour at about 400 degrees (sorry I can't be more specific -- I cook primarily by feel). Way less fat, way less mess. Works well with sweet potatoes too, or nearly any other vegetable. You should try roasted broccoli or cauliflower -- both yummy!
I never get past steaming cauliflower or broccoli -- love them both! One day when I have a huge amount, I'll try the roasting. Thanks for that and the french fry tip!

I, too, bless the frozen french fry makers. I'm sure homemade ones probably taste better, but the frozen ones are so good and SO EASY.
And thank you for that King Ranch recipe! Our Whole Foods often has that dish on the hot bar, and it's so delicious, but fattening. I will definitely make this.
Yeah, EASY is the key word here... and you're welcome, this recipe saved me from the giant horrific reaction I had when I actually looked at the nutrition stats of the real King Ranch. I thought it was gone forevah.

I can't imagine potato salad without hard boiled egg. You are missing out, man.
No, no Tina, trust me. I KNOW what I'm missing and I will gladly give all my boiled eggs in potato salad to you. If they're in there, I physically can't eat it. The gagging. Not pretty.

Um. No egg salad? No deviled eggs??? What kind of a human are you, anyhow?? Deviled eggs are my numero uno favorite thing to eat. I would seriously eat my weight in deviled eggs if I could manage it. Mmm yummy!
That casserole looks GREAT! I will try it this winter. I LOVE casseroles.
The boiled/deviled egg situation speaks to my issues with food texture. Boiled egg whites are way too cushiony, the yolks too yellowy. stiffly creamy and I have a truly bad physical reaction with them in my mouth. I guess I'm just egg challenged.
On the other hand, gotta love a formerly decadent but still so good casserole!

I actually put a picture of an OreIda package in my FFoF post this week, lol! Love em, almost all varieties. I also do the fries in the oven, with a little olive oil spritzed on to crisp them up.
I'd do olive oil, but the male people I live with would notice something non-standard right away and refuse to eat them, I fear. But then again, more for me LOL.

Do you eat fried eggs? Your recipe sounds delicious. I used to get Cooking Light magazine. I have a few favorite recipes from there.
Karen -- I only really like scrambled eggs, but have been known to dip toast into a sunny side up yolk. I recently resubscribed to Cooking Light, I really enjoy it.

Um.. they make microwavable french fries now that kick BUTT.. we love them.. I think it is Ore-Ida..but I am not sure..
Oh. awesome. Are they frozen? I must hunt for them.
