Being a huge fan of blue (or is it bleu?) cheese, I finally had the occasion to make my own bleu cheese salad dressing.
Using a bavarian blue-brie and a Stilton as a base, it came out very well.
The recipe:
2-3/4 oz. Bavarian Triple Cream Brie-Blue
1/2 oz. crumbled Stilton blue cheese
2 T heavy cream
3 T sour cream
2 T mayo
2 t rice wine vinegar
large pinch sugar
small pinch garlic powder
pinch of salt
pepper to taste
smattering of piquin powder
What to do:
Schmoosh the triple cream blue cheese together with the two tablespoons (T) of heavy cream until a very thick paste-like substance is formed (schmooshing is best done with a fork).
Add the sour cream, mayo, vinegar, sugar, and garlic powder and stir things together. Add that smattering of piquin powder. Add your salt and pepper (to taste) now as well.
