This is easy, it takes a wee bit o' time, but it is sooooooo good (I add A LOT more bacon too :
Baked Potato Soup
4 medium baked potatoes
2 slices of bacon
½ cup celery, chopped
½ cup green onions with tops, thinly sliced
1 can (14 ½ ounces) chicken broth
1 ½ cups milk
1 garlic clove, pressed
½ teaspooon salt
¼ teaspoon ground black pepper
1 cup light sour cream
2 ounces cheddar cheese, shredded (1/2 cup)
Remove skins from baked potatoes. Coarsely mash potatoes. In 4qt casserole, cook bacon over medium heat untl crisp. Remove bacon to paper towel to drain; crumble and set aside. Discard all but ½ teaspoon drippings in pan
meanwhile, chop celery. Thinly slice green onions. Add chicken broth, milk, mashed potatoes, celery, onions, garlic, salt and black pepper to drippings in pan. Bring to a boil. Reduce heat; simmer 10 miutes. Stir in sour cream and reserved bacon. Ladle soup into 4 bowls. Shred 2 tablespoons cheese over each serving.

Well, I'm fixing us sweet and sour pork chops tonight for dinner. It's the recipe out of Betty Crocker's cookbook (Everything You Need to Know to Cook, I think it's called). My husband always loves it! And thanks for stopping by my blog ... I added you to my list!

Does Jon like curry? If so, I have a totally easy recipe for that. Also I make flank steak with polenta - totally easy. There is a really yummy chicken parmesan in everyday food I make (that could be made lowfat too). Let's talk this week and I'll give you the recipes. Oh, and don't forget to douse everything with parsley my dear!
