off the top of my head, i speculate that it is thrilling because it combines the exciting rush of hearing an awesome song for the first time (what is this? it sounds amazing! turn it up!) with hearing a familiar song in which you have already invested a lot of emotional capital (oooh snap! this is my jam! this is MY jam, baby, turn it up!).
additionally, a new orchestration will may put different melodies or harmonies in the forefront, making more explicit parts that you didn't consciously notice in the original. kind of like when you find out that someone you love or admire has a talent or quality that you didn't know about, but one which you probably should have been able to deduce in retrospect given all the other things you know about him/her.
unnecessary analogy? probably. anyway...
in related news: why spoil such an awesome melodic moment by rhyming "minute" with "minute"? that part makes me so sad.
