Father,
My pastor is constantly scrounging statues and other neat stuff from antique stores, garage sales, etc.
He rescues cast-offs. After dark, our church basement is rather nervewracking, with Saints' eyes watching your every move.
I know it would be much harder in UT than in Chgo to find Catholic stuff, but maybe that could work? Or eBay. 
(The church sounds like it's going to be really nice.)

Good work, Father!
Once you begin using the church, attendance will rise sharply. That's a good time to ask the people to help financially with unfinished details.
Two observations on spelling variations. Mother Teresa spelled her name without an "h". "Guadeloupe" is the French way for the Spanish "Guadalupe".

The Infant of Prague idea is REALLY NICE. So obvious, but nobody else seems to have thought of it! You go, Father!
You know what would be nice, too? Cry room frescoes. They always have such boring walls. Some nice bright saint or Bible paintings in nice bright latex colors (that can be sponge-cleaned) would be awesome.
When I was a kid I always liked going to churches that had pictures all over them. Stained glass windows are a start, but really, you need total coverage to keep kids quiet. Especially the ceiling.
