Loved your blog.
I love potatoes and saffron and never considered them together, sounds delicious, I'll give it a try soon.
In Mexico (where I leave) a potato is simply a potato and they are all white the only choice is big or small, redskin or whiteskin (to me they taste the same... On the other hand we have many varieties of chili peppers, so I can test it with pepperoncinis ond then with different chilies (serrano may be a good alternative)

Manuel-I envy you all the chili peppers that you can try! I love hot food! Sometimes I wonder if the warmer a country is, the less they care for potatoes...probably because the warmer climate give a wider choice of vegetables. Good luck!

Did not came to think about it until now, but yes potatoes are part of the modern Mexican diet but they appear very little on classic Mexican dishes. Starch usually comes from, corn, rice and beans
