I don't think I have ever eaten kale, but this looks delicious. I'll have to look for it here. We do have one specialty market that has lots of unusual vegetables.

I'm glad you posted about cavolo nero--it's one of my favorite greens. and i agree with Paz, the simplicity is wonderful. I even had a friend use these greens instead of collard greens for a traditional southern recipe. she stewed the greens with hamhock (salted pork meat and bone) until they were tender and served them with black eyed peas. i love cultural fusion!

Thanks for this simple recipe Ilva! I've used Cavolo Nero in soup many a time but not tried it other ways. By the way, for people in the US - you'll find this kale sold in the market under the name Dinosaur Kale.

Cavolo nero might be the best vegetable on the earth. I love it love it love it. Can't find it often enough!

Luisa-I'm so surprised to have found so many cavolo nero lovers! I like it a lot, it has this slightly bitter tinge that makes a wonderful combination with olive oil and bread!
