Gravatar This sounds great - I did a grilled radicchio risotto on my site a while ago and it was really yummy, but I like the telaggio idea! You've made me a telaggio convert! The one I got looked much more creamy though; almost like a ripe brie or something...is it supposed to be harder than that? BTW - I finally got my recipe index up, inspired by you!

Michelle- That sounds interesting, I'll try it out because marco LOVES radicchio di Treviso!! No, it's perfectly ok, just different stages of maturation. Guess who's gonna check out what later today???

Kalyn-you should try, it has this mild smoky taste that even I like dispite the fact that I'm not particularly fond of smoked stuff!
