This sounds great - I did a grilled radicchio risotto on my site a while ago and it was really yummy, but I like the telaggio idea! You've made me a telaggio convert! The one I got looked much more creamy though; almost like a ripe brie or something...is it supposed to be harder than that? BTW - I finally got my recipe index up, inspired by you!

Isil-It is actually only grown in the north of Italy, the real on that is, so no wonder you never seen it!

Kalyn-you should try, it has this mild smoky taste that even I like dispite the fact that I'm not particularly fond of smoked stuff!
