I like the sound of this a lot. I just bought a big bag of pine nuts (at my beloved Costco of course). I know just what you mean about the garden chores never quite getting done. Here we are still about 3 weeks away from being able to work outside, but close.

Look at those little gems! Gorgeous. Pine nuts are big in New Mexico, too [we're getting ready to sell our house and move there this spring].

Pine nute seem to make everything taste wonderful. Almost everyone here loves Melanzane as well (tastier sounding than eggplant!) so we will try this one soon!

surfindaave-yes, eggplant has a different ring to it, sounds almost healthy...
sam-yes isn't it a wonderful combination, the softness of the eggplant and the chewy pine nut always make me want to eat more. And more. And more...
