That looks really good. I think that's wonderful that you have fresh bay leaves right there ready for you to use. I have to use dried but that is better than nothing! I usually them in soups and stews but have never given an thought to something more sweet like an apple dish. The Quiona looks great. I actually that it.

My dear Ilva, I see you have been cooking up lots of lovely and delicious spring-like things! I love the flavor of fresh bay leaves - once you've had the fresh ones you just can't go back as they have so much more flavor! I'm jealous that you can just walk out your door to them, lucky girl! This dish sounds really fabulously yummy - and healthy, something my body craves more and more as the weather gets warmer (though we still haven't seen any sun yet!)

How lovely this is, and thank you so much. Fresh bay leaves right outside? beautiful. I combined the bay leaves with prunes, but apples might work well--potatoes are "apples of the earth"

Karina-I have to say that quinoa must be one of the best 'bases' for vegetables that exists! I just love it!

Despite having seen so many recipes using quinoa recently, I'm yet to eat - and cook - with that ingredient. Your recipe may just be the inspiration needed (although could you use any other veg instead of fennel? I'm not tooo keen on aniseedy flavours).
