Ilva, this looks really good. I too never salt the aubergines prior to preparing them. I have never found them to be bitter. The only thing I think it would help is when fry the aubergine. I believe by adding salt and letting the water drain allows it to fry better without soaking up so much oil. Just something I read in one of my ever so clever cookbooks. All that takes far too much time - so I fry without salt

My mouth is watering.. this is right up my alley and I love your recipe. The pictures are great too! I might have trouble finding that exact sausage here in the states, can you suggest a similiar kind?

I like the sound of this a lot. In the garden stores here, these are called Japanese eggplants, although I have no idea if they are actually grown in Japan. I've grown them in my garden a few times, and they are good grilled, just cut in thick slices lengthwise, then brushed with a little olive oil and some crushed garlic.

Meeta-Mah maybe it's like your clever cookbook says but eggplant absorbs oil anyway and it is one of the reason to why it is so good, isn't it?! I'm happy not to be alone in the salt question!!

What a "cool" looking eggplant! The recipe sounds really yummy too! I had always wondered if an aubergine was the same as any old eggplant, so now I know! I also see they have Hawaiian egglplants, so I'm going to have to check those out when we make it over there. PS. I love the picture in the above post too.

I just made stuffed eggplant for some Vegan clients on Monday. Too bad I didn't know about the string to tie them up. What a great idea!
