I read this post and looked at the pictures...and somehow the word 'delicious' seems utterly insufficient to describe these treats. Can't seem to think of *any* word to describe them. Except perfect.

totally agreed with you about rosemary (even the name itself is a beauty), but I couldn't pick on it as my very favorite... The baked apple looks so lucious!

I'm so glad you decided to join WHB way back a long time ago so we could become such good friends! I think your combination of rosemary and pine nuts is just inspired. This looks fantastic. I'm not sure I've tasted quince, although Christine blogged about it last week and made me want to try some.
I have to say I was not at all sure what your favorite herb would be since you use them all so well. And of course, the whole idea of choosing a favorite is a bit impossible, but that's half the fun.

These pictures are amazing.. as is the sound of this tempting dessert! I haven't seen a quince where I live, but I think the combination of apples and rosemary would be wonderful! Beautiful job =)

Ilva, strangely we share similar tastes, Rosemary is my #1 top of the list herb! Your recipe is all a gal could ask for, it is on the menu for next weekend! As for aging and life speeding around you, don 't fret, here's a little gem for you:

Hi Ilva,
I can't begin to say how I love your recipes. I only started reading your blog yesterday, but I already marked at least a dozen dishes which I want to cook. I love the short list of ingredients (and I read your comment on how you don't like too many ingredients in a recipe because it means there'll be something you won't have at home), I love how you cook so many kinds of vegetables in different combinations (I don't like cooking meat) and how you experiment with gluten-free cakes and how they contain ricotta (I recently went gluten free). Also, I love your risotto recipes because rice is a staple of my gluten-free diet although I've always found it rather boring.
And your photos are just amazing! You're so lucky to live in Tuscany; I admire the natural beauty of many parts of the world and I love the severity of northern landscapes but there is something about Tuscany's rolling hills, cyprus trees, and lined fields and vineyards that always strikes me as perhaps the most beautiful landscape in the world...
BTW, i'm 34, live in Poland, teach at a university, and visit the US once a year because of my job and my many American friends.
