Looks yummy, I think the rice flour is so much light in the cake than regular flour... I have a recipe called "Feather cake" because it is as light as a feather, I must make it and post up soon... Vida x x

I'm with you, Ilva. I feel like I've baked and baked recently. But that cake looks great. I love bananas in cakes and breads.

Ilva, this cake is beautiful! I've never baked with rice flour before but I was cleaning out my pantry yesterday and found that I actually have some. Maybe it's a sign? I do the same thing with my freezer. I save and I save and I save and then I realize that my freezer is packed and I have no idea what's in there! I just cleaned that out too and I found a few not-so-nice surprises!

This recipe is exactly what I need since I have family members (in Tuscany) who must have gluten free diets.

I know why I love your recipies.
There you did it: healthy vegetable dishes + CHOCOLATE BANANA CAKE right next to each other. I am confused. How many servings of veggies does 1 slice of that cake count for (sorry for asking such stupid questions, but you forgot to include that essential information *tztz*).

How wonderful! I can't wait to make this! I have looked at cakes made with ricotta for a long time with interest- I thought it would translate wonderfully to a gluten-free cake. Looks beautiful.

I meant to add that thats a very good tip about freezing overripe bananas. Have never heard that before and will be trying it out. Thanx! Keep on bragging! You deserve it! I heard the other day about freezing fresh ginger as it grates very easily once frozen. I threw my ginger in on Thursday and it works so well. Cant believe I battled with grating stringy ginger all these years

Just a hug.
I baked an apple pie on Sunday.
Healthy. No sugar in the dough.
None with the apples.
Still some left.
It's Tuesday.
I love any of your recipes,
so bring them on, the good, the bad and the incredibly healthy ones.
Hug,
M.

Vida- do, it sounds interesting!
maryanne- I think I'll bake a bit less this week...

Oh, wow, that looks great! Unfortunately, we just cleaned our freezer, and out went all our frozen bananas. Then again, it's probably for the best; I'm sure some had been in there for almost a decade!

Jim- Well, freezers have a tendency to fill themselves up so soon there will be bananas there again!
