Gravatar Ilva, this cake is beautiful! I've never baked with rice flour before but I was cleaning out my pantry yesterday and found that I actually have some. Maybe it's a sign? I do the same thing with my freezer. I save and I save and I save and then I realize that my freezer is packed and I have no idea what's in there! I just cleaned that out too and I found a few not-so-nice surprises!

Gravatar How wonderful! I can't wait to make this! I have looked at cakes made with ricotta for a long time with interest- I thought it would translate wonderfully to a gluten-free cake. Looks beautiful.

Gravatar I meant to add that thats a very good tip about freezing overripe bananas. Have never heard that before and will be trying it out. Thanx! Keep on bragging! You deserve it! I heard the other day about freezing fresh ginger as it grates very easily once frozen. I threw my ginger in on Thursday and it works so well. Cant believe I battled with grating stringy ginger all these years

Gravatar Oh, wow, that looks great! Unfortunately, we just cleaned our freezer, and out went all our frozen bananas. Then again, it's probably for the best; I'm sure some had been in there for almost a decade!
