P.S.:
The proper term for "taking out something wobbly from the form it's in" would be "unmolding", i.e. inverting the container ( = mold) with the molded food, usually over a (serving) plate.

This sounds delicious! This is a dessert that I've wanted to try for a long time but have never gotten around to it! After seeing these gorgeous photos, I think that we'll be having this for dessert on the weekend!

It has to wobble!. That was the unwritten rule I remember from one of my college lecturers. She was a dragon, but I really owe her a lot.
With anything like this, I always leave them to set overnight, and then just as I am about to tip them out, I stand the mould in a little hot water, just a few seconds. Of course my mother still has a larder, with air bricks from the outside, that is always on the right side of chilled,and she has one particular spot that sets anything - oh how I envy that larder.
This looks delicious, and a wonderfully summer twist - yummy.

I'm glad it turned out in the end. I definitely know how frustrating it can be when things don't turn out, (the crepe cake, the damn crepe cake!!!)

The blend of flavors is delicious. Anything with cardamom is awesome and pairs well with strawberries.

Nice. But allow me to say, wouldn't it be a hearthy idea to loose all animal components(ie gelatin) and replace it with something like agar agar? I'm off desserts for the moment otherwise.........

Ellie-It's even better with milk or almond milk like the use in Sicily I find but the first wouldn't be very heart healthy and the second takes a lot of time. And good almonds.
