Gravatar So funny that I posted a plain panzanella yesterday, and now you have embellished it so cleverly. This looks seriously good, and definitely worth a try. But, then, I think panzanella is a frame of mind, rather than a recipe ... and certainly a lot of tomato sandwich addicts who left comments on my blog yesterday seem to think that too!

Gravatar Well...I feel a little ashamed, I had heard of Panzanella before but never had it (I've never been to Tuscany...other than Florence or Pisa or Massa, never in the countryside!!!) and so I didn't know what it was. Now I do! Thanks, something refreshing worth a try...maybe with some other bread, I don't know if there's unsalted bread over here!

We cannot get unsalted, Italian bread here in the U.S., but now you have me curious about the flavor difference in this salad. I guess I will have to wait to try your version in Tuscany. Gravatar I do love this salad in all it's variations. The avocado is such a natural!! And all the different chili peppers I can get. Guess I'd best be getting out a good Tuscan bread recipe and go for it.

Gravatar It's a nice idea to add avocados and chili to the panzanella. I will have to try out next. But before I will bake some bread without any salt. I think it is better to toast that fresh bread before it soaks in the salat, isn't it?

Franz-Thanks! if the bread is not stale it can be a good idea to leave it in the oven to dry out for a while!

Pam- It's so simple that you don't need any recipe, just yeast, water an flour. I add a little sugar to help the yeast! Good luck and remember that it takes some time to get used to it!
