How wonderful - I *love* the idea of serving it in an aubergine! I'm also not a huge fan of pasta salads but this one appeals.

You had me at vegetables and capers.
I just harvested my first zucchini crop and some oregano this weekend (ya, started late). So, this will be a perfect (yummy) recipe!
ps - I am completely envious of your life in Tuscany.

Thanks for my dinner inspiration. We ate this tonight out on the front porch with I nice Italian Rose. I tossed in clipping of three dryish slices of prosciutto and some shavings of parmigiana. Excellent, nothing like the "pasta salads" passed off here in the US.
I love your use of avocado in so many different dishes.

What a beautiful post! And, what a lovely idea. I usually steer clear of pasta salads because I find all the pasta overwhelming...this is a nice way ti sidestep that concern. I think I might try this, perhaps tossed with some goat cheese...

I love pasta salads... but not usually other people's picnic salads... Like you, I think they tend to be uninteresting.
This one, on the other hand, is VERY interesting... I love it!

I'm picky when it comes to pasta salads, too! Over here, many people will combine overcooked pasta with some coarsely chopped raw carrots, pickled cucumbers, diced ham und mix it all with a mayonnaise-laden dressing. Horrible. Your salad looks gorgeous, though, I'd love that one, I'm sure.
