I'm doing a Ter-Duck-En this week for a party. Here at home I've got going bison chilli & a etouffee of gator & crawfish. Luckly it's cold enough to cool down the pots tonight outside as my fridge is to small to hold both batches.

Do you prepare a tur-duck-en from scratch, or do you order a pre-formed set of birds?

Scratch, can't make costs if I buy one from someone else. I use 3 stuffings, wild rice w tasso & cranberries, cornbread w/andouille & oyster. The customer gets a half pan each extra.
