The carrots are dipped in chlorinated water to kill any surface bacteria, NOT to prevent the white blushing. White blushing on a carrot is simply the cut surface of the carrot drying out, which you can easily demonstrate by cutting an organic free-range sustainably-harvested insert-your-favorite-buzzwords-here carrot in half lengthwise and leaving it unwrapped in your refrigerator for a few days. Stick the other half in a sealed plastic bag with a teaspoon of water and leave it in the refrigerator next to the unwrapped half. Discuss.
