The VB omelets are so good! My first few attempts didn't work though. I ended up with a few small omelets instead of 4 big ones because I kept screwing them up.

Thanks for sharing your frustration about tofu measurements--I thought I was being petty and childish and all those things one tries to pretend one's not. My math abilities are as good as the next gal's, but I refuse to open a package of tofu and figure out anything beyond an eighth.
And don't get me started on recipes that measure anything but silken tofu in cups. Filling a big measuring cup with water and using displacement to measure my tofu? F that S.

i'm impressed with your tofu skillz. my first attempt at VB tofu omelette looked strikingly similar to your first two pics. maybe there's hope for me too

You can do it! Just keep trying. Seriously: now that I made one successfully, they've all come out well. You just have to manage that first one, and it'll be cake from thereon out.

I've never used anything but chickpea flour, but I'm guessing there's a good likelihood you can just use all-purpose. But it might not taste quite as delish. If you try it and it works, holler! Good luck!

The tofu omelet is reason alone to buy Vegan Brunch. Isn't it INSANELY AMAZING!?!?! I didn't even like omelets before I was vegan, but now, I am obsessed!
